Do alcohol calories count in cooking.

Hi I need your collective wisdom and knowledge. I have just cooked a rabbit in cider meal. And even though I say it myself it was delicious. My problem is I put in 500ml of French cider. According to the database this is over 230 cal. But during the cooking the recipe says all the alcohol is boiled off. My question is this as most, if not all of the calories in cider are in the alcohol do I count the 230 cal for the cider in my meal?

  • I'm not positive but since the flavors are still there I'd say the alcohol burned off but the sugars remain so the calories would, too. Just my thought, though :)

    This was my thinking too. Alcohol is so caloric because of the sugar and the sugar doesn't burn off.

    I have a similar question about marinades. When I marinade something, I work out the whole calorie allotment for the whole dish. But usually most of the marinade doesn't get consumed when the meat is cooked. I haven't really worried about it because I'm sure there are other areas where I'm underestimating, but it doesn't seem fair to count calories I'm not eating

    It's the sugar in the alcohol that has the calories not the actual alcohol so you need to count the calories.

    I include it like I would in any recipe. If I make soup, but only eat a portion of it, I'm not going to use the calories for the whole crockpot of soup. I only count what I ate. It's never going to be exact, but if I put 2 tablespoons of oil in a pan to cook meat, I don't put that I consumed all 2 tablespoons, I just guesstimate and split it between however many piece of meat I cooked. Like you though, I am not that precise.

    If you're worried about it, figure out the calories of the marinade by total weight, then weigh what you don't use to figure out what to include.

    Include the calories. What do you think is boiling off? The water content of the alcohol of course. All the nasty stuff is still left in the pan with your food.
  • What I do sometimes if I don't need to know the exact count of every thing is just leave a bunch of calories left in the day as my "room for error." The most I'll do in that case is 200 cals or so. If you do a quick workout you can do that without having to weigh everything :D.

    But maybe don't listen to me because I'm just lazy about weighing.
