Fast Easy Healthy Dinner Recipe's...

Hello Everyone!

I am trying to eat healthier meals but I am struggling to find the right things to eat. Does anyone have any great, fast, easy to make dinner recipe's that they can share with me? Recipes that I can make on Sunday, seperate into portions and stick in the freezer would also be greatly appreciated. Thanks for the help all! :smile:

    If you like fish.. Mahi Mahi 4.0 oz or one portion from the costco bag and you season it with Lawrys seasoning salt, pepper, and a old bay stick it in the oven 400degrees for 15min. Nice and moiste. Make it with either 2 cups of salad or 2 cups of steamed veggies. Very filling and very healthy!:happy:
  • My new favorite thing is the following:

    1) Make a big pot of soup - I like to take about 10 zucchinis, 3-4 onions, 5+ cloves garlic - clean and cut into big chunks (takes 5 minutes!) and put in pot. Cover with water and add some salt and or a bit of low-cal soup seasoning mix. Bring to a boil until all veggies are soft and then process with a hand-blender. (You can add whatever veggies you like!)

    2) Make some brown rice.

    3) Poach 2 eggs.

    #1 and #2 can be made on Sunday and stay in the fridge all week - ready to eat when you are. #3 can be made in 5 minutes. Measure out 1.5-2 cups of soup, 1/2 cup brown rice, and add the two poached eggs - instant dinner in very little time! And very filling and healthy! Total calories - 339! You can add tofu (can you tell I don't eat meat?) or even sliced chicken breast to this meal-in-a-bowl! Enjoy!
