cake in a mug rcipe

A few weeks back a few people had posted a recipe for a mug cake you make in the microwave.....I have been looking everywhere for it but can't find it.....would appreciate anyones help if they have it.....THANKS!!! in advance.

    Thanks for the tip.....fairly new to the site so any advice is always welcomed....I am trying to get the hang of this.....I don't do facebook or twitter, etc. so this is all new......THANKS!!

    I make this HG version a lot. It's not super healthy but really quick and easy!

    Expresso Cake in a Mug
    (I use ramekins)

    1 tsp instant coffee granules
    1 tsp mini semi sweet chocolate chips
    3 tbs chocolate cake mix (my fave is Betty Crocker triple chocolate)
    1 tbs fat-free sour cream
    1 tbs liquid egg substitute
    1/4 tsp vanilla extract
    1/8 tsp baking powder
    1 no cal sweetener packet (I use stevia)
    dash of salt

    Place coffee and chips in microwave safe mug sprayed with non stick spray. Add other ingredients. Mix well. Microwave for 1 minute 45 seconds (that's too long in my microwave...I usually go for a minute and 20 seconds) Cool slightly and enjoy! 147 calories as per HG.

    Sometimes I top with canned lite pie cherries and a dollop of light cool whip. NOM!

You'll also find a fun video inspired by my book, "101 Recipes for Microwave Mug Cakes." If you can't find the recipe in my book, it probably doesn't exist!

    Wow, thanks a bunch...these mug cakes are the greatest,....one (or two) serving...just right size and fresh everytime!! I will be checking your website later today!!!:smile:
