So, I'm looking to transition to veganism. I've been a vegetarian for almost two years now and I really just want to make the switch. I'm wondering if anybody has any yummy recipes that I could maybe try. I don't like vegetables really (ironic and stupid, I know) but I'm really looking to add them into my diet. Anyone got any recipes I could try?

Google them and you'll easily find them, As you I'm on my transition to veganism and hate leafy salads lol, but I do green smoothies and veggie packed meals like the Quinoa chili from "two peas and their pod"

1 med. can of crushed tomatoes
1/2 package of soy beef or crumbled tofu
1/4 c finely chopped onion
1/4 c diced green pepper
1- 2 tsp fresh chopped garlic
1 Tbsp olive oil
3 c cooked whole wheat penne
1/4 c shredded rennet free soy cheese (Mozzarella flavour)
Saute onion, garlic, and green pepper until tender, add tomatoes and reduce heat to medium. Simmer approx 25 min, stirring frequently, until sauce is becomes thick. Add the soy beef or crumbled tofu, mix well. Drain the penne, add to sauce, and stir to cover. Dump pasta into oven-proof casserole dish, spread soy cheese evenly across the top of the pasta, cover and bake at 350 for 20 min until cheese is bubbling.
Serves 2 (or 3, if you fill half your plate with a salad ... ) Leftovers can reheat nicely in the microwave. I've never done a nutritional calculation on this recipe, but I can tell you from personal experience that it fills you up fast. (A double copy of this is my favourite "potluck" dish, and it usually disappears pretty quickly, lol...)0 -

You should get Chloe Coscarelli's book "Chloe's Kitchen," its full of amazing comfort foods (all vegan, all easy to make)! Lots of main dishes, pastas, and desserts. Other great vegan cookbooks include "Skinny *****: The Ultimate Everyday Cookbook" and "Clean Food." I would recommend Chloe's first, though, as its the most simple way to start vegan cooking.
