I'm sure you could make a cream cheese icing sweetened with honey instead of sugar. :happy: I don't know of any carrot cake recipes but isn't it usually just a normal cake with shaved carrots and walnuts inside?0

i use a spice cake mix and then add carrots, pineapple, coconut and nuts. theres usually a recipe on the side/back of the box for it and also a way to make it lower cholesterol, and by using applesauce you can make it lower in fat.
as for the frosting using a low fat cream cheese with powdered sugar would make a nice frosting.

Well I am making a carrot cake next month for my son's birthday so your question sparked my interest so I looked it up and tweaked an already low calorie recipe to make it a little lower calorie and this is what I came up with.
* Bread, reduced-calorie, wheat, 4 slice (remove)
* Egg substitute, liquid (Egg Beaters), 1 cup (remove)
* Coconut oil, virgin, 4 tbsp (remove)
* Vanilla Extract, 2 tsp (remove)
* Great Value Instant Nonfat Dry Milk Powdered, 1.33 cup (remove)
* Baking Soda, 2 tsp (remove)
* Brown Sugar Substitute-Sugar Twin, 36 tsp (remove)
* Cinnamon, ground, 2 tsp (remove)
* Pineapple, fresh, 2 cup, diced (remove)
* Carrots, raw, .5 cup, chopped (remove)
Blend all ingredients in blender until smooth, bake at 350 degrees for 45 minutes.
If you portion it into 8 servings then each serving will be:

Thanks, guys. I was actually looking for a carrot cake "pancake" recipe and messed up when I posted, and left out the word "pancake". But I think a carrot cake recipe can probably be modified to make it as a pancake. I had seen a reference to a Carrot Cake Pancake with Cream Cheese sauce on a Weight Watchers brochure, and it peeked my interest (since I like pancakes, although I limit myself on how often and how much), but had never tried a carrot cake flavor. I have some nonfat cream cheese, so figure I can fudge some kind of sauce with it. I love experimenting. Thanks for the recipes posted.0
