BACON-OATMEAL-MUFFINS
No time for a healthy breakfast? With those muffins you'll always have a tasty breakfast that you can eat on the run.
BACON-OATMEAL-MUFFINS
(makes 16 muffins)
Ingredients:
8 slices turkey bacon
1 1/2 cup natural applesauce
1/3 cup sugar or sweetener that measures like 1/3 cup sugar (I used a sugar/sweetener blend)
1 cup water
3 Tbsp oil
3 eggs
2 1/2 cup rolled/old fashioned oats
1/2 tsp salt
1/2 tsp baking soda
1 tsp cinnamon
2 scoop vanilla protein powder
Directions:
1. Fry turkey bacon in a pan or in microwave till crispy. Let it cool and chop in small pieces.
2. Mix applesauce, sugar/sweetener, water, oil and eggs in large bowl.
3. Mix oats, salt, baking soda, cinnamon and protein powder in seperate bowl and add to wet ingredients.
4. Mix till well blended and add chopped turkey bacon. Mix again.
5. Let batter rest for at least 30 min, so the oats can soak up some of the liquid.
6. Fill paperlined muffin cups 3/4 full with batter and bake at 350°F for about 25 min. Tops will be golden brown.
7. Let cool completely (otherwise paperliners will stick).

Of course you can use regular bacon as well. It will only increase the calories a bit.
I had turkey bacon that we don't like to eat by itself, therefore I added it to the muffins.0 -
Looks good---they sell turkey bacon bits now---so no need to fry-turkey bacon is hard to crisp just right. The bits are amazing.0
