Low Cal Beef Lasagna-very filling!

1 LB 96% lean ground Beef
1/4 cup white onion chopped
1 Container Prego Heart smart traditional sauce
1 4/5 cups low fat ricotta cheese
4 oz fat free cream cheese
1 egg
4oz oven ready lasagna noodles
1 cup 2% reduced fat Mozzarella shredded cheese

Cook ground beef and onions, and add prego sauce.
in another bowl mix with mixer, ricotta cheese, cream cheese, and egg
in a square pan, put a thin layer of sauce and meat mixture on the bottom,
then layer, 2 noodles, ricotta cheese mixture, then meat sauce. repeat twice.
you should get 3 layers, ending with meat sauce.

Cover with foil and bake on 350 for 40 minutes

Sprinkle top with 1 cup mozzarella cheese and bake uncovered an additional 10 minutes.

    Good idea! If you wanted to lighten the recipe a bit more you could do every other layer with eggplant and spinach instead of noodles. I found adding extra veggies into lasagna lower the calories and up the fiber!

    Quick question though, what is the cream cheese for? Is it mixed with the ricotta because it has less calories or just a different texture?

    my family has always made lasagna with cream cheese added, i just like the taste. :) and yes my friend said she uses zucchini in place of the noodles, I may try that next time, she said she prefers it that way! :smile:

    yes i used 8x8 and i only used 6 noodles :smile:

    I mix my ricotta cheese with cottage cheese. When its just DH & I instead of noodles I slice zucchini & yellow squash ( I'll have to add spinach too next time). But if all of the kids (& their spouses, & grand kids) come over its the regular version with noodles. My family is so large i have to do it in the big blue turkey roasting pan. Regardless of which version I make I use low fat or lite on all of the cheeses. Always have & kids don't care. And my ground beef is 99% lean. Maybe I'll pick up some squash & do this next weekend. Thanks for the reminder of how good this is!

    Is there only one size jar of that particular Prego sauce? I know some come in family size or regular size?

    this sounds delicious! the only problem is i might end up eating the whole pan....i love lasagna, its my fave food! gonna try this recipe this week.

    You could replace the lasagne pasta sheets with leeks. Basically slice down the middle and blanche to create sheets.

    It was a success for two dieting TV chefs here in the UK last year.
