Mini Quiche

As requested here is the recipie for mini quiche "muffins"
Preheat oven to 350 degrees
6 egg whites
1 whole egg
1 tbls flour
1 bell pepper finly chopped
1/4 cup grated parmesan cheese
1tbls dijon mustard
1 cup spinach (frozen or fresh. If fresh run through food processer for a few seconds)
Salt, pepper, and chili powder to taste
Mix all ingrediants together and pour evenly into lightly sprayed muffin tin. Bake at 350 for (about) 20min.
These reheat really well and you can add just about anything to the mix (pepers, mushrooms, onion, meat, etc).
As is 32.6 cals/each muffin CFP 1.4/ 1.1/ 3.9. Makes 11
You can top with cheese of your choice.

I do the same thing but I use one whole egg per muffin instead of just whites and skip the flour.0
