Sweet Potato & Peanut Stew
Hey all,
Tonight I made an adaptation of an african stew my dad makes - so I thought I'd share as it's pretty hearty.
Ingredients:
1 can of chopped tomatoes
2 onions
4 tbsp of peanut butter (smooth, but you can go crunchy if you swing that way)
3 small sweet potatoes (or as many as you wish!)
500ml of veg stock (you may not use it all)
1 zucchini/courgette
2 tbsp olive oil
2 cloves of garlic (I like garlic.... alter if you see fit)
1 tbsp chilli (flakes, powder, fresh... whatever you have on hand)
- Add olive oil to your pot and soften onions for about 5 mins
- Add garlic, saute till fragrant
- Add chopped tomatoes, peanut butter, half of your veg stock, zucchini, sweet potatoes and chilli, stir
- Place lid over pot, simmer for about 20 mins or until the sweet potato is cooked through. Add more stock as you go if it's needed.. the final product should be thick
And that's it! I serve mine with brown rice or on it's own. If you want to up your protein, add meat in the beginning.
Tonight I poached a salmon fillet in the pot for the last 10 mins.
This is such a flexi-recipe, you can basically add any veg to your own taste: my dad usually adds spinach, okra or kale.. but I had none of these to hand so just roll with what you feel would work best
