watermelon and feta salad

made this yesterday for a BBQ I went to. It was sooooooooooooo yummy!

oh and I ued fat free feta to save on some calories.

INGREDIENTS
DRESSING
2 Tbsp olive oil
1 Tbsp white wine vinegar
1 Tbsp lime juice
1⁄4 tsp each salt and pepper
SALAD
1⁄4 small red onion, thinly sliced
1-lb piece seedless watermelon, rind removed, cut into thin chunks
1⁄2 seedless cucumber, cut in half horizontally, sliced
3 cups baby arugula
3 oz feta cheese, crumbled
PREPARATION
1. In a bowl, whisk together dressing ingredients. Add onion and let sit 10 minutes.

2. Add watermelon, cucumber and arugula to bowl. Gently toss to combine.

3. Top salad with crumbled feta and serve

    I actually used the organic spring mix from earthbound farms (you can get it at costco) tasted just great!

    I've also made a watermelon salad just with cubed watermelon, crumbled feta and black pepper to taste (quite a bit). Simple and yummy but don't make ahead - it'll go watery.
