Tuna "Salad"

It's a very nontraditional salad, no lettuce, though it couldn't hurt to add some. I'm on a 50/30/20 meal plan and thought I'd try for less sandwiches, hehe. It would work well with a 40/40/20 meal plan as there are almost as many carbs in this dish as there are proteins.

Ingredients:
1 can chunk light tuna
2 tbs sour cream (I use full sour cream, only 60 calories)
8 slices of cucumber
1/4c uncooked couscous

358 calories, 40g carbs, 8g fat, 34g protein

Cook the couscous in your favorite broth and let it cool. Mix the tuna with sour cream until creamy. Then julienne or dice the cucumber slices. Dump everything into a large bowl, mix until blended, and eat.

It might be nice with some spices (thyme and dill maybe?) but I'm happy with how this turned out. It's very refreshing and more filling than a sandwich.

    I'm glad you like it; I haven't had a tuna sandwich since I created this concoction and I'm not sure if I ever will.

    Oh yeah, adding a 5 oz roma tomato would add 17 calories ... makes it pretty and tastes great too. I also dice it up and mix it in.
