Cabbage & Pepper Bake

4C Cappage
1 Yellow Onion
1C Grated Carrot
1/2C Egg substitute
1C Skim Milk
6 TBS Cheese
1/2 TSP Seasoned Salt
2 TBS Parsley
2 TBSP Grated Parmesan Cheese

Saute cabbage, Carrot and Onion
Transfer to a baking dish
Combine egg, milk, cheese, salt
pour over veggies
sprinkle w/parsley & parmesan
bake 350 degrees for 30-35 min.

makes 6 servings

Mine was a little different. I used 6 cups cabbage, 1 bell pepper, no onion or carrots w/3 whole eggs. I seasoned with NSA seasoning and red pepper flakes. I also added 1/2C of cheese instead of the 6TBS.

My way: 110.1 Cal, 6.6 Fat, 3.7 Sat, 96.1 Chol, 215.9 Sod, 243.4 Pot, 6.7 Carb, 2.4 Fiber, 1 Sug, 9.1 Prot

    ok so i made this tonight for dinner and.....EVERYONE liked it! the kids and all! I didnt put any peppers in but i did follow the recipe otherwise but probably put more veggies in than it called for. I didnt use parsely but put some garlic powder and some shredded asiago cheese on top. I also put in one 30 calorie slice of ham in diced finely. I will be maing this again for sure...thanks :)
