Lemon Blueberry Baked Oatmeal - Super Yum!
I made this for breakfast today and it was so good & filling...

However, I adapted the recipe a little to make it a little lower in calories... I used only a pint (as purchased) of fresh blueberries, it was plenty! And I used egg beaters substitute, truvia baking blend instead of sugar, and un-sweetend almond milk. I also used a slightly larger oval baking dish so and made this 6 servings instead of 4. My serving was still huge!
My adapted version ended up being only 219 calories, 42 carbs, 5 fat, 6 protein, 6 fiber and 12 sugar
I'm totally making this again and I think i may mix it up with other berries too!

I've only heard about them from reading cooking blogs... I think they are like a cross with a little more orange flavor, and extremely seasonal. I've never seen or tried them though. I made this today with just a standard lemon and they were delicious
And I'm thinking the lemon isn't even crucial... the flavor was minimal. I think for my next batch I'm going with strawberries, and maybe a teaspoon of vanilla extract instead of the lemon juice0 -

Just a little update... this keeps really well for leftovers on the go all week. 2 days later and I'm still loving this!0
