Brown Rice!

Anyone have any quick and easy brown rice receipes??? Thank you!

    Last week I made this. It takes about 45 minutes, but I made loads and put some portions into the freezer...

    300g brown rice
    1 can green lentils
    1 can chickpeas
    200g onion, minced
    300g carrots, chopped
    150g bell peppers, chopped
    150g tomatoes, cut into big chunks
    2 Tbsp. olive oil
    Spices

    - boil rice for about 25 minutes in salted water
    While rice boils
    -fry onion in oil until translucent
    -add carrots and cook for a couple of minutes with the lid on
    -add pepper and cook on medium-low heat with lid on
    -add tomatoes and just briefly boil (about two minutes)
    - I put salt, cayenne pepper, paprika, cumin, dried ginger and some other lovely spices into it, but I'm sure a simple curry mix would do the job
    -in a large bowl, mix rice and fried veg.

    This makes about 7 portions, each having about 300kcal.

    I hope you like the idea. Generally, brown rice, some kind of canned beans and some veg always make a nice meal :)

    I just tried this the other day and it taste awesome...

    Cook uncle ben's instant brown rice (you don't have to use this brand this is the one I like) as much as you want then add sundried tomato pesto by classico...ratio is 1 teaspoon per cup of rice but sometimes I put a little extra....so easy and quick...you could use any type of pesto you want to switch it up.

    I made this last week, just substitute brown rice. It was yummy and I skipped the blackened onion part.
