I have a great slow cooker and love using it. However, I am running out of recipes for it. If anyone has any new ideas that will help... please post. :smile:

    have you done a search under slow cooker in recipes--there's a post with several websites and a lot of great recipes. also search using crock pot.:drinker:

    I just tried someone's recipe they posted called Crockpot Mexican Chicken. Take 4 chicken breasts, 1 cup salsa, 1 can cheddar cheese soup, and 1 taco seasoning packet and cook on low for 8 hours. We made that last weekend and OMG!!! We served on an open whole wheat taco-sized tortilla w/refried beans and whole grain rice w/sweet corn. It was to die for!!! :love: :love:

    I have 2 that I cook alot. I don't know the calorie count for them.

    Cheesey Chicken

    Frozen chicken breast ( I use 3 of the large ones)
    2 can Cream of Chicken soup
    1 can cheese soup

    mix the soups together, pour over the chicken
    cook on low all day (I am gone 8 hrs)
    dice the chicken when done

    I serve over spaghetti or egg noodles for the family. I have mine over a salad; it is good over rice also.


    Chicken Enchiladas
    Frozen chicken breast
    Tortillas
    Cheese
    Enchilada sauce (1-Lg can or 2 small ones)

    Pour enchilada sauce over frozen chicken, enough to cover.
    Cook all day on low
    When you get home shred the chicken

    Place some chicken in the center of a tortilla, roll up, place seem side down on plate. Cover with enchilada sauce, some shredded cheese and microwave for one minute. This is how I make mine. For the rest of the family I put cheese inside and outside of the enchilada, plus I add sour cream to theirs

    Not fine cuisine, but easy.

    Here are several that I've accumulated from other MFP posts:


    Salsa chicken

    2 pounds of chicken breasts
    1 large jar of salsa
    1 can of whole corn kernels, drained
    1 can of black beans, drained

    put the chicken and salsa in the crockpot, cook on low for about six to seven hours.

    A half hour before, add the corn and black beans.


    Latin chicken & blackbeans w/sweet potatoes

    3 lbs. bone in chicken thighs w/skin removed
    2 15oz. cans blackbeans drained & rinsed
    2 lbs. sweet potatoes peeled & cut in 2 in. cubes
    3 cloves garlic minced
    1 red bell pepper chopped
    cilantro
    1/2 c. salsa
    1 c. chicken broth
    lime wedges
    2 tsp. ground cumin
    1 tsp. paprika
    1/2 tsp. ground allspice

    Sprinkle chicken thighs w/ 1/2 tsp. cumin (or to your taste), salt & pepper. Cook in hot skillet until brown on both sides (approx. 5 mins per side). Place chicken on plate. In same skillet, combine salsa, chicken broth, remaining cumin, paprika & allspice (do not heat). Place sweet potatoes, red pepper & blackbeans in crockpot, layer chicken on top, & cover w/sauce. Cook on low for 8 hours. Sprinkle w/cilantro & serve w/lime wedges. Makes 6 servings


    Crockpot Philly Cheese Steak Sandwiches

    1 lb. steak
    1 green pepper
    1 red pepper
    1 med onion
    1/4 c. white wine
    1 tbsp. worchteshire sauce

    Cut up onions & peppers & put in crockpot. Put steak on top, season it with favorite seasonings, pour liquids in & cook on low for 6 hours. Serve on hard rolls w/favorite cheese (I used provolone).


    Crockpot Chicken Tacos

    4-6 boneless chicken breasts
    1 can black beans
    1 can Mexican seasoned diced tomatoes
    1 packet of chicken taco seasoning
    1 can corn

    Cook on high about 4 hours, shred, then serve in tortillas or on a bed of lettuce with fat free sour cream and 2% cheese 


    Chicken Tortilla Soup

    2 big chicken breasts
    chopped yellow onion (1/2 cup or whatever you like)
    2 cans diced tomato (I use the ones with green onions in them)
    1 can black beans
    fresh garlic (2 cloves)
    fresh chopped cilantro (2 tbsp)
    tsp of cumin, chili powder, onion powder
    dash salt & pepper
    2 cups of chicken broth and a cup of water

    Put it all in the crock pot and cook on low for 6 hours or so. When you are close to eating, take the chicken out and shred it (it should shred quite easily) and put back in the pot for a little bit.

    Take a large La Tortilla Factory whole wheat tortilla, cut into triangles or strips, spray with cooking spray and salt lightly and heat up in the oven 400 degrees for about 5-8 minutes until crispy. Put on top of soup after pouring in bowl, also can add fat free shredded cheese and/or Greek yogurt for creaminess.


    PORK Carnitas

    2 pounds pork shoulder
    1/2 cup freshly squeezed orange juice (about 1 large orange)
    1/4 cup freshly squeezed lime juice (about 1 large lime)
    7 cloves garlic (whole intact)
    1/2 tablespoon kosher salt
    1 tablespoon cumin
    1/2 cup beef broth
    corn tortillas
    sour cream, salsa, sliced avocado (optional)

    The Directions.

    Use a 6 quart slow cooker. In a small bowl, combine the salt and cumin. Rub mixture all over the pork, and then plop into the slow cooker. Add whole garlic cloves. Squeeze on the citrus, and pour the beef broth evenly over the top.

    Cook on low for 8-10 hours or until the pork shreds quite easily with a fork. If your meat is still fully intact after 8 hours, remove and cut into chunks, then return to the crock and flip to high for about an hour or two.
    Shred meat fully and serve on warmed corn tortillas with desired toppings.
