What to make my boyfriend for dinner???? Please help!

I am going to my boyfriends tomorrow (he still lives with him parents but they are gone for a month) and I will get there before he gets out of work. I wanted to surprise him with a nice meal (something that's not a usual) and a glass of wine. Any suggestions for a nice meal that I could make without having to buy a million ingredients (I'm sure I can find stuff at his parents house but then again I'm not sure what they have). I also do not have all day for something to marinate or cook, I probably only have an 1-2 hours to make it. I would love some healthy ideas for me and something he would love. THANKS:happy:

    Baked stuffed eggplant is good... I usually get a bunch of vegetables plus the eggplant meat and saute them lightly then fill the eggplants. Then cover the eggplant LIGHTLY with bread crumbs *maybe a tablespoon each* and shredded low-fat cheese and bake in the oven for 25-30 minutes at 350 I think... You can check google for a better recipe. Also, vegweb.com has great recipes. A lot of them are vegan or vegetarian so the calorie counts are lower.     Pop a Stouffer's lasagna in the oven for an hour and bon appetite! Haha, just kidding.

    You could probably find a lot of healthy appetizers, entrees, and desserts.

    Otherwise, if you don't like cooking so much, I have several low fat (really low fat, actually) cookbooks that I could find a recipe from for you. All the recipes are really easy to follow and hardly take over 40 minutes to make. You can't tell that they're low fat either. What kind of cuisine (Asian, Mexican, Italian, etc.) are you looking for?

    I made this chicken pie today - it is a weightwatchers recipie and a woman on youtube demo's exactly how to make it, so if you can have a laptop/iphone to hand whilst your cooking it makes it really really easy to do. It is only 7.5 points (very approximately 350 cals). It was really delicious and took less than an hour to make. 20 mins prep, 20 mins in the oven and 10 mins doing the veg etc.

    I just watched her make the entire dish and it looks delicious and easy. I think I'll make this for him tomorrow night. And thank you everyone for all the good ideas.. I do have an apartment when I'm at school so I can definitely use these recipes again!
