Salmon Cakes Even the Kids will LOVE

I love salmon cakes - good protein - but my kids won't eat them. So I put a box of dried stovetop stuffing in a food processor, mixed it with a can of Alaskan Salmon (liquid from can and all), a large egg, 1/4 cup of Fage greek yogurt, 1 tsp dried dill weed, sprinkle of old bay, 1 tbls deli mustard and mixed together. I used a large ice cream scoop and pattied out 16 cakes. Pan seared them in a little olive oil till crispy on both sides. My whole family went crazy for them and the macros aren't bad - 90 calories 8 carbs 2 fat and 8 protein. I also took Fage yogurt, 1 tsp lemon juice, 1/4 dill weed, sprinkle of smoked red pepper and 1 tsp yellow mustard and made a sauce. Worth a try!

    have you found de-boned canned salmon anywhere for a good price? the only place i've found it is trader joes and its slightly expensive. i hate de-boning it myself, what a pain.

    These sound good... I love salmon, but i'm not a fan of the canned, so i'd use fresh, just cook it myself & shred it.

    Sounds like a good recipe. I just used one that I found online for salmon cakes that I wasn't over the moon about. Thinking I will use your recipe next time. :-)

    Agreed! Curious how big the can of salmon was? I would probably make this with fresh cooked salmon... but I love stovetop so I'll be trying for sure.

    Please confirm how much salmon is used :flowerforyou:

  • Yes I only used one can of salmon. The box of stuffing really makes the recipe stretch. I used a large ice cream scoop to measure my patties which is the perfect size for me.

    For the person with the de-boning concern........just smush up the bones, they are very soft and high in calcium!!!!
