Black Bean & Corn Salsa

I've wanted to share this recipe ever since I started visiting the forums. This is a go-to recipe for something healthy to eat that tastes great, even to those who aren't trying to lose weight. It works great served with tortilla chips, or as a topping for salads.
1 can black beans, rinsed and drained
1 can corn, drained
1 red pepper, halved and chopped fine
3 green onions, chopped (green section only)
1/4 cup finely shredded cheddar, optional
2 T Sambal Oelek (or jalapeños, or hot sauce), optional
1 bunch of Cilantro, halved, chopped (leaves only)
Salt & Pepper, to taste
1/4-1/2 Sour Cream (start with less and add more as needed) or Greek Yogurt

This looks and sounds great, but I really don't like sour cream or yogurt. Would there be any kind of alternative?0

Good question. I don't honestly know. I wonder if you could try cottage cheese? Maybe even a wedge of laughing cow cheese thinned with a little milk. . .? It's worth a shot!0

I saw a similar one with just a bit of lime juice and olive oil as dressing.0

I've often considered adding diced tomatoes but since hubby hates tomatoes. . . Still it would be good that way!0

I use Tostitos bite-size rounds. They're like 140 cals for 24 chips. I love that I can feel like I'm cheating but still be somewhat healthy!0
