Healthy Passover Ideas

Hi! Passover starts Monday night, and I'm just getting back on track with my diet. Does anyone have ideas for healthy meals during Passover? Most recipes are really rich and high in fat.

For those who don't know, during Passover you can't eat anything made with grains (wheat, barley, rye, spelt) or corn/legumes/rice. That also includes corn syrup and corn oil. So...it's pretty tricky. :)

Dinners are ok, but I really need ideas for breakfast and lunch. My plan was to grill up some chicken early in the week to put on salads for lunch, but since it's supposed to snow tomorrow, that might be a problem. :) I don't eat eggs, which makes this even tougher! (eggs baked into something are ok...it's a taste thing, not an allergy thing!)

    I would look up Paleo recipes for breakfast and lunch and use your judgement to ascertain which ingredients you may need to substitute with something else. :smile:

    Thanks - I just started looking at the Paleo recipes. A lot of them call for almond flour, which I don't think is kosher for Passover, but I also just dropped an email to a friend who's a rabbi to ask. It's only a week, but I really want to make it work.

    Boka tov! It is kosher (purely ground up almond nuts) depending on the community and traditions you observe some Rabbi's may not like it@flour. My friends are Sephardim who are permitted rice and legumes during passover. So good call on the Rabbi. :)
