Summer Broccoli Tuna Salad

I made this for lunch yesterday and it was so good and filling:

One serving Ronzoni or Barilla Wheat Penne
One can chunk light tuna in water (drained)
150 grams (or however much you want!) of steamed broccoli.

After preparing the pasta and steamed broccoli, I let cool for about ten minutes (this is good to make for lunch the night before) then toss it in a tupperware with the tuna. For seasoning, squeeze half a lemon over all, add two teaspoons of olive oil, sprinkle with garlic powder, salt and pepper to taste. I might try adding a pinch of red pepper flakes next time for extra kick. Then I just leave it in the fridge until ready to munch! The lemon gives it a nice, refreshing flavor.

Tuna is so good for you and protein packed, I'm trying to find new ways to eat it besides between bread or on crackers.

    I love tuna too - this sounds wonderful. This would also be good with Northern Beans or Garbanzo beans in place of the pasta - I've found I love the combo of Beans and Tuna - just rinse them well if you use canned, makes for a very filling meal - try it in a whole wheat tortilla as a wrap, maybe with some lettuce and onions!
