Healthy hearty soup recipes

I love soup....I love the fact that you can make it a pretty decent meal.

I love trying new recipes out as well. Please list your favorite soups to make.... here are some of mine

All for 2 people

Chicken thai noodle soup
1 cooked shredded chicken breast
1 nest (1 person serving size) of noodles - cooked and drained
selection of choosen veg
I use bean prouts, grated carrots, mushrooms, onions and peppers

for the broth
chickn stock
chilli
ginger
garlic
soy sauce
fish sauce
lime juice

fresh corriander / cilantro

method.....
in a deep sauce pan
add a little oil and lightly fry onion garlic, ginger and chilli.
add lime juice, soy and fish sauce
add veg and sautee for a couple of minutes
add stock - check taste - may need to add a little more of the above for taste

add shredded chicken and noodles

serve with fresh corriander/cilantro sprinkled on top

-Sometimes I use half chicken stock and half coconut milk
-sometimes I use beef instead of chicken

    pea and ham soup

    1 onion
    2 cloves garlic
    chicken stock
    2 cups frozen peas
    200g chopped ham

    method

    fry off garlic and onion in saucepan until tender
    add stock and peas
    simmer until peas cook

    blend

    return to heat and add ham to heat through

    and serve

    carrot and corriander/cilantro

    onion
    garlic
    ginger
    chilli
    300g of carrots gratted
    chicken/veg stock
    big bunch or corriander/cilantro

    sautee onion, chilli garlic and ginger
    and seasoning
    add stock and carrots
    simmer until cooked
    add corriander / cilantro and blend

    They all sounds gorgeous.

    Might make some over Easter and freeze them for work. :o)

    Left over roast dinner

    the clues in the name

    Chicken dinner

    boil the bones in water to make a stock with stock veggies for about an hour.

    drain off bones and discard

    Add left over veggies and meat chopped up

    voilla!!
