Dijon Maple Chicken Thighs with Caramelized Onions

Recipe makes 4 servings

Ingredients:

1 package chicken thighs (boneless and skinless), thawed
1/3 cup dijon honey mustard
1/3 cup maple syrup
1 tbsp rice vinegar
1 tsp coarse kosher salt
1 tbsp black pepper
fresh rosemary, finely chopped
4 oz of caramelized onions (I used something similar to this recipe: http://allrecipes.com/recipe/caramelized-onions/detail.aspx?event8=1&prop24=SR_Title&e11=caramelized onions&e8=Quick Search&event10=1&e7=Recipe)

Preheat oven to 450
Mix together honey mustard, maple syrup, and rice vinegar and whisk until well blended.
Place chicken thighs in a small glass baking pan (9x9 works great) and top with mixture being sure the coat thighs well on top and bottom
Sprinkle tops of thighs with kosher salt and black pepper
Bake for 20 minutes
Remove from oven and baste thighs with extra sauce in the pan so they stay moist
Bake for another 10 minutes or so until meat reaches 165 degrees internal temperature

Let stand about 5 minutes so the sauce thickens back up.

Serve with veggies and top with caramelized onions and rosemary.

    I'm going to try them in the crock pot next (obviously not with the onions in there at the same time). Let me know how they turn out and if you made any changes to the recipe as a result.

    My five year old helped me prepare the sauce for the chicken last night and would not stop tasting it from the bowl! I didn't have rice vinegar so I used Apple Cider Vinegar instead. The chicken was delicious and my 5 year old had TWO servings, which is amazing for him!
