Tequila Lime Shrimp w/ Cilantro and Lime Quinoa

We had a very flavorful and yummy meal last night and I thought I'd share the recipe. This would feed three people with healthy sized portions or four with smaller portions:
Tequila Lime Shrimp w/ Cilantro and Lime Quinoa
Ingredients
1 tablespoon oil
1 shallot (chopped)
2 cloves garlic (chopped)
1 jalapeño (chopped)
1 teaspoon cumin
1 pound shrimp (peeled and deveined)
1/4 cup tequila
1/4 cup lime juice
1 teaspoon lime zest
salt and pepper
1 handful cilantro (chopped)
Directions:
1. Heat the oil in a pan.
2. Add the shallots and saute until tender, about 3-5 minutes.
3. Add the garlic, jalapeño and cumin and saute until fragrant, about 1 minute.
4. Add the shrimp, tequila and cook until the shrimp are pink, about 1-3 minutes per side.
5. Remove the shrimp and set aside.
6. Simmer the sauce to reduce to the desired amount.
7. Remove from the heat and add the shrimp, lime juice, cilantro and salt and pepper.
Cilantro Lime Quinoa
1c. Quinoa rinsed
2c. Water
1 lime
handful of chopped cilantro
1. Rinse the quinoa well.
2. Bring two cups water to a boil and add quinoa
3. Reduce heat and simmer (10-15 min)
4. Squeeze fresh lime juice over quinoa
5. Add clinatro and mix well
