    Is there a reason everyone looks for a sour cream substitute? I just use light sour cream, but maybe I am missing something...

    I think using Greek yogurt to instead sour cream, is little thin. I make my homemade yogurt, and strain it for about 4 hours to Greek yogurt; strain 8 hours the plain yogurt become yogurt cheese, can be used as sour cream. More sour taste than Greek yogurt. I did that last year. They can not tell it was yogurt cheese or sour cream. Lol.
