Anyone have Ceviche recipes?

I've had Ceviche out a few times and really love it. Today I was out and had some at a Peruvian restaurant
which had white fish, shrimp and Calamari in it with such a refreshing finish I felt so good and was clean eating. So, I wondered if there was anyone out there on MFP who has some wonderful recipes to share. I'm so looking forward to
making some of my own :) Thanks so much in advance if you do share.

    I just use tilapia, popcorn shrimp, lime juice and salsa.

    One of the nice things about this is that the citric acid cooks the seafood, so you can mix it in the morning, pack it in ice and take it for a picnic.

    The ceviche I had in Mexico was delicious. I think it's basically uncooked seafood, lemon juice and fruit/vegetables. The one we had chopped mango, bell peppers, tomato, etc.

    I think it would count as raw, since it's not heat treated. I did just read that as for shellfish, if you don't get it right off the boat, it's better to cook it, since shellfish is more quickly suseptable to bacterias. Hmmmm, something to consider before trying to make it.

    I believe the one I had on a cruiseship had mango. I'll have to go see if I can find the photo of the ceviche I fell in love with the first
    time around. I loved it so much, I asked for a second appetizer each night we ate in this one cruise ship restaurant..........

    read the people's reviews to get a sense of what you personally are looking for and what suits your taste preference. I do recommend letting it sit in the lime juice for a few hours and using some finely minced jalapeno instead of hot sauce. I would also eat it w tortilla chips and not saltines, but to each their own.

    Tortilla chips (tostadas) for ceviche, saltines for Cocktel campeche (shrimp, avocado, ketchup and hot sauce)!

    oh yes... it doesn't really matter what shrimp you buy, just make sure it's raw..

    ha yes, the more seafood the better. You can also add octopus and imitation crab in to the original recipe to get more seafood mixture. use that imitation crab stuff(shred it all up), don't use shell fish.
    Octupus is hard to cook as well.

    If you buy 2lbs of shrimp, you can boil the shells and make a nice broth to add to the ceviche. We sometimes even add a shrimp flavored bullion cube in to the boiling shrimp shells.

    You can also get like 1lbs, boil it(already peeled). then you an dice up those pieces, and mix them in when it's all ready. So you have raw and cooked shrimp. add the broth fro the shells after it's cooled.

    when we would make it in mexico, the meats we used where shrimp, octopus, scallops, calamari, abalone...we would mix it all together.


    I definitely feel I want to combine shrimp, scallops, and calamari. I really didn't know until today that they were "cooked" in a lime bath. I'm still adjusting to that it's been raw, lol. I read, though that shellfish was best cooked ahead unless coming direct from the boat. What do you think of that? You seem to be so experienced with this and would know best I think.

    Also I like the idea of cooking the shrimp shells to make a broth, which I'd love to do for a fish soup........that sounds great. How long do you cook the shells?

    shrimp, tilapia, onion, cilantro, tomato, avocado and add a little pineapple juice to the lime juice.... YUM!

    I haven't had ceviche in a long time, but thanks to this post, I now know to check what is in it before I eat it.

    Evil mango could have struck again. Damn allergy.

    dice an onion, put the onion and the shrimp in a bowl and cover with lemon juice (takes a lot of lemons).

    stir ocassionally, letting it sit for about an hour. In the mean time, dice, cucumber, tomato, avocado, cilantro. For every pound of shrimp, it's 2 cucumbers 1 tomato and 1 avocado.

    once the shrimp is done cooking in the lime juice, mix all ingredients. Add some clamato(don't use V8), add salt, pepper, to taste. We dice habneros, and add hint o wisochiore sauce as well.

    Funny as I was just looking at aceviche recipe from Skinnytaste.com that I was going to try to make for a potluck this week when I saw this post. But the above poster ceviche reipes looks very good.

    2lb tilapia, flaked
    1lb precooked deveined shrimp, diced
    2 containers of pico de gallo
    1 diced large cucumber
    1 cup lime juice

    stir in a bowl

    serve on a tostada, top with guacamole

    I'm so glad that we have all learned so much today about Ceviche and I'm grateful to have all this knowledge now to move forward with!! Everyone who posted, thank you and to all who will try it out, ENJOY!! as I will for the first time when I make it myself :)
