Shrimp Egg Fried Rice w/ PHOTO, 6 WW points

I have wanted to try making this since a pot luck last week. Yes, this recipe is carb heavy but you can make less rice if you want or eat it on a work-out day. It’s so low in calories, so easy and yummy, perfect for a busy weeknight.
Shrimp Egg Fried Rice
1 ½ cups brown Minute Rice (makes almost 3 cups cooked)
¼ cup egg beaters original
1 cup frozen peas and carrots mix
20 frozen pre-cooked shrimp, tails removed
1 tbsp soy sauce
Directions: Cook rice in a medium pot as directed, turn off heat once completed. Scramble eggs in a frying pan, add to rice once cooked. Microwave frozen vegetables for approximately 2 minutes then add to rice pot. Heat shrimp by pan frying for approximately 10 minutes until heated through; drain then add to rice pot. Add soy sauce mix and serve; serves 2.

Nutrition: 356 calories, 3 grams of fat, 7 grams of fiber, 65 carbs, 22 protein, 630mg sodium (use reduced sodium soy sauce if sodium is a problem for you) . I added it as a meal; if it appears in your data base (which I believe it will) I titled it Shrimp Egg Fried Rice.
