The Perfect boiled Egg

I watched a Easter special with Emeril Lagasse and was super surprised on how to cook the perfect boiled egg. Its been fool proof for me now. I remember the number 13, boil 2 mins, remove from heat and cover for 11 min, cool in cold ice water, Perfect eggs every time!

    I found something similar a couple of days ago and it's great how amazing the eggs turn out and how great they taste. I turn it off when I notice the boiling and leave them covered for 12 minutes.

    Yeah. basically that technique has been around forever, it's foolproof.

    By perfect, does that mean no shells impossibly stuck to the egg white making it so difficult to peel? Thanks for the formula! :flowerforyou:

    I use this method but I still get tough peelers unless the eggs are *just* before expiration. Older eggs peel better, IME.

    For a perfect peeled egg....when done boiling..place eggs in ICE COLD WATER until cooled..shell will peel off completely ....:smile:

    If your Emeril, the shells won't be difficult, however you usually experience a bad egg to every batch lol

    Not sure about duck eggs, my favourite egg is turkey however i have never boiled them.
