Fruit Crisp

Easier and healthier than a pie! :bigsmile:
Ingredients
Filling:
1 nectarine
1/4 c. blackberries
1/4 c. blueberries
squeeze of lemon juice
1 T. packed brown sugar
1 t. cornstarch
dash of ground cinnamon
Topping:
1 T. honey
2 t. canola oil
1/3 c. quick-cooking oats
1 T. flour
Directions
1. Mix together ingredients for filling.
2. Mix together honey and oil, then mix in remaining ingredients for topping.
3. Pour filling into oven-safe dish(es) and top with topping.
4. Bake for 20-25 minutes or until bubbling and topping is golden brown.*
*I'm sorry everyone, but my toaster oven doesn't have temperature control (I just set it on "bake"). But when you can see/hear it bubbling, and the oat topping is nicely browned, it's time. No raw ingredients to worry about anyway.
OK, so the only thing not really healthy here is the flour. Although you could probably go with whole wheat flour and then there really is nothing bad here. So healthy I had it for lunch (I was going to have it for breakfast, but I had a fasting blood test, so by the time I got home, I wasn't in any mood to wait any 25 minutes for my breakfast to bake, and I ended up making a sandwich for breakfast instead ). I might try it with some other combination of fruits, and I might try it with honey in place of the brown sugar. If you guys get to it before me, let me know how it goes, yes?

omg! i was just getting ready to make a cobbler, but already feeling guilty....but this would probably be smarter. i want to use these HUGE sweet as sugar bing cherries they have at sam's. also you could use almond flour....maybe0

Sounds great! I just used up the last bit of fruit in the house... but I am definitely trying this as soon as I get some more! I'll try with whole wheat flour and let you know how it is.0

bump..i'm a clean eater..even i'm gonna try this one..with strawberries instead of nectarines, only cause I don't like them and whole grain flour, gonna try to cut the oil in half...see what happens! with a big *kitten* dolop of frozen vanilla yogurt ontop...yummm-o0

Do you know the calorie intake?
If this serves 2 people its 212 calories, 6g fat, 4.2g fiber which is 4 WW points each.
Sounds really fun, I must pick up some cornstarch. I’ll probably go to bulk barn to get just a few tbsp's since I’ve never used it, I don’t want a big bag. Thanks!0 -
