Anyone have some nice pork or salmon recipes??

Hey all!
Just fancy either some salmon or some pork tonight for dinner and I was just wondering if anyone had some nice recipes?
I have done a lovely cajun salmon with cucumber salsa and yoghurt before or orange marinated pork with baked potato. Was going to do either of these but wouldn't mind something different if any of you have any great ideas!

I make a dijon mustard marinade for salmon and bake it. I serve it over a whole wheat couscous white bean salad. It's amazingly tasty. I'm sorry I don't have a recipe but the salad includes: garbonzo beans, one chopped green onion, feta cheese, olive oil and olives if you care to add them.0

Salmon Steaks, Goat style.
Every had a Montreal Style steak? Same concept.
Rub ingredients:
Lemon Zest (5ml)
Crushed Red Pepper (5ml)
Medium ground Black Pepper (5ml)
Course Ground Sea Salt (10ml)
1/2 Clove of Garlic Minced
Extra Virgin Olive Oil (60ml)
Mix all the dry rub ingredients together thoroughly in a small bowl, then rub the mix evenly into the top and bottom of the thawed salmon. then brush the Olive Oil in and make a nice even glaze.
Flame up the BBQ Grill (Or Stove-top Griddle, Grill's better)
Low/Medium Heat half vented with a pan lid or the fluke on your grill.
2.5 mins rotate 45 degrees, 2.5 mins then flip, and repeat.

I LOVE salmon! I eat it a lot as I don't eat meat, only fish. I have this receipe that I use when I'm really hungry and don't want my dinner to take too long!
Thai Salmon (15mins)
One salmon steak per person.
Garlic (How much is a personal choice!)
Raw ginger (again, personal choice!)
Thai rice
Green curry paste
Veg of choice (I use peppers and muchrooms.)
Put rice into pot to cook.
Season salmon steak to personal taste. (I just use black pepper. We get enough salt in other things!)
Put onto a square of tin foil big enough to cover entire steak.
Chop ginger and garlic and add to tin foil square.
Wrap up the salmon and pop into a preheated oven. (180.) For 9-12mins depending on cooked preference!
Make another parcel with chopped veg and a teaspoon of extra virgin olive oil. Pop that into the oven along with the salmon.
Add some curry paste to boiling water in a small pot.
Drain rice and then cover with the curry paste mixture. Just enough to barely cover rice.
Pop the rice back on the hob and allow the curry mixture to reduce.
Drain the remainding water from the rice and add the veg.
Take the salmon from the oven and pop on top of the rice and serve!
The rice gets a lovely kick to it and the ginger and garlic make the salmon taste AMAZING!!!
