Asparagus Soup

Here is a simple recipe for asparagus soup. Very good base that you can add to as you see fit...loaded with goodness and very tasty (if you like asparagus).

1 Bundle Asparagus (usually 1 Lb)
2 TBSP Cheese Whiz
2 Chicken Bullion Cubes
Spices to taste (I use Cayenne Pepper a lot, Garlic or Garlic powder, Black Pepper to taste. Have also used curry powder which was awesome if you like curry).

Put your aspargus in a dutch oven type kettle. Put in enough water to cover, maybe a touch more. Add your bullion cubes. You can use some chicken stock instead if you want. Add your spices. Hold the cheese. Boil the asparagus for as long as you want. I usually boil it for about 25 minutes to get it very soft. Puree the asparagus very fine. There are a lot of fibers so you have to really give it some time. Add your cheese and mix it in well. The cheese adds some salt, so no salt needed. Obviously you can add all of the spices later in the process if you want. Its really easy. I add some chicken in afterwards, or just eat it plain. Like I said...good base for anything.
