Vegetarian Diet?

I've been a vegetarian for 2 and a half years and have just recently become more concerned with my weight and the way I'm eating.

I do eggs for breakfast normally or whole wheat toast with a tbsp of peanutbutter. Lunch and dinner are the problems, any good recipes that are simple yet effective?

    I *try* to be a vegetarian who is lifting and eating closeeee to her macros. It's rough.

    For breakfast I can't have eggs and pb b/c of the fat content. Rarely I'll have PB, but I will do egg whites daily. I also have a protein shake daily. (powder w/ skim milk has lower sodium than if you buy premade, sometimes I'll put frozen greek yogurt in the blender for flavor see info below)

    I eat a LOT of Quorn (not so much Morningstar b/c of the Soy)
    The NAKED Quorn is the major major key for me b/c I can use it as fake chicken breast in any recipe. Be careful of the other quorn products due to their fat content. I don't avoid soy or tofu entirely, I just try to cut back because of the research linking it to health issues including breast cancer. When I first went 'healthy' vegetarian I had it like 5X a day! Just trying to cu back. Also Quorn tastes better.

    Also at whole foods they have this "Field Grain" fake lunch meat and hot dogs that taste soooo much better than the Lightlife or Yves. Also they don't have soy. The hotdogs are high fat, the tomato lunch meat is not.

    Paleo bread has a ton of protein also. (for bread) and wont bloat you with sodium.

    I use a LOT of ancient harvest quinoa pasta, and quinoa because of the protein content, at lunch or dinner lately. You can even put quinoa in a crust less quiche (works for lunch too). Additionally, with quinoa pasta you can try to make a pasta frittata out of it with egg whites instead of eggs. Tons of recipes online for that.

    I have 0% fat greek yogurt daily. I usually add some ground flax seed to the yogurt since I don't get enough omega 3's from fish being a vegetarian. You can also get frozen greek yogurt, if this much dairy is too much for you Kefir has a nondairy 'greek' 'yogurt' as well.

    I do eat some nuts, but again moderately due to fat content. Same with beans, some but not too many due to fat content. Make sure if you do beans you get dry and soak, or get the 15 mg / can beans not the 450 mg per can ones.

    The hardest thing for vegetarians on diets is not living off of cheese imo, you don't want that much fat and sodium in your diet.

    I go vegetable shopping at least 2 X a week and fill up massively on that front. After all it's a vegetarian diet, not a white starch diet.

    Hi there! I've been a vegetarian for 16 years and I know how easy it is to get caught up on the carbs! Over the last two years I've slowly dropped 30 lbs and have transitioned to a mostly vegan diet.
