When I make cake, instead of using white sugar, use brown sugar, but half of the amount, then add applesauce to help in sweeting and substitute for the oil and make the cake very moist, use unsweetened cocoa powder and egg whites instead of whole eggs. Then make sure you make cupcakes instead of a whole round or square cake, this will help in portion control. And instead of frosting the cake, just sprinkle some powder sugar on it. It's very yummy.0

The diet pop cake is really incredible. My mom made me one not long ago for my B-Day and even my husband the anti-diet man loved it.... White cake mix, diet sprite, and a can of crushed pineapple - non-fat whipped cream on top. Delish!!!! I'm going to try a chocolate with a can of diet coke next.... I also read you can put a couple of egg whites in the mix to fluff it up a little. Either way it was an awesome birthday cake and I didn't feel the least little bit bad about eating it! :bigsmile:0

I made a diet pop cake for Fathers Day.
Devil's food with coke zero...I found it was better to add a couple of oz's more ( seemed alittle stiff with just 12 oz). I baked in 8 " cake rounds using the times on the box
Filling for the middle. 1 small box of sugar free jello pudding ( chocolate)--spread the filling when the cakes are complely cool. -just follow the directions on the box, and let set.
I topped with a large container of fat free cool whip ( with a large box of sugar free jello pudding mixed in ( it tasted like cocolate mousse). Just make sure that if you want to mix in pudding with the cool whip that you do it right before you are going to frost your cake.
pop it in the frig for a couple of hours before serving.
I felt sooooooo guilty eating this, but I worked the numbers and it was approx 300 calories for 12th of the cake....it was soooo rich.0 -
In place of diet soda you can also use a can of crushed pumpkin in place of all ingredients but the mix itself. (I usually add just a splash of water). Bake as directed otherwise0

I'm all over the diet soda cake, but here's a very delicious alternative that you could serve to everyone at the party and they'd have no idea it was calorie reduced. Takes really fresh and the portion is generous.
Light Pineapple Orange Cake
1 Box Yellow cake Mix
1 C liquid egg substitute or egg whites
2 T Canola Oil
2 10oz cans Mandarin Oranges in juice
3 T water
Topping
1 box (1oz, 4 serving size) instant sugar-free vanilla pudding mix
1 10oz can crushed pineapple
1 carton 8oz fat free whipped topping thawed
Preheat oven to 350. Spray a 9x13 pan with cooking spray. In a bowl, beat together cake mix, egg substitute, oil, oranges with juice, and water. Beat with electric mixer on high for 2 minutes. Bake for about 25 minutes until edges are lightly browned and knife inserted into center comes out clean. Cool.
For topping, in a bowl, fold pudding and pineapple into whipped topping. Spread immediately over the cooled cake. Refrigerate.
12 servings.
