We recently moved and are really struggling with finances. We were given alot of canned tuna and salmon from our church....i'm not quiet sure what to do with it lol. I have 2 kids 3&5 and I need a kid friendly recipe as well as healthy ones for me please.

When I have tuna in the house I usually biol up some pasta, (whichever is your favourite) then drain the tuna, stir it into the pasta add some fat free mayo and stir it all up. I also sometimes add some sweetcorn if i feel like it.0

This recipe comes from 'caring for children' a book written by dietitians for childcare centre menu-planning
Tuna mornay
Mix together a can of tuna, some cooked rice, whatever veg you feel like (onion, tomato and mushrooms work well) and a can of condensed soup (not diluted) then top with a mixture of bread crumbs and reduced fat cheese and bake until golden.
Also maybe one of my mum's old faves
Fishcakes
Mix together a can of tuna with some mashed potato and an egg to bind, add some onion if you want. Coat handfuls in breadcrumbs and either dry-fry in a non-stick pan or bake in the oven.
Or you could go more simple and mix tuna or salmon with a little low fat mayo and chopped veg and use for sandwiches, with rice or on top of a baked potato.0 -
I just had yummy tuna cakes that I baked...One can made 7 patties!!!
I usually mix in canned tuna or salmon, any veggies I have (shredded) like this time I had 2 carrots and I shredded it, egg, mayo, parm cheese, or any cheese, and panko breadcrumbs...Mix it up and form into patties on a cookie sheet 10 minutes later, its good...
OR, I usually do tuna pasta salad, mayo, artichoke hearts onion, tomato and pasta...0 -
You can make a tuna ceviche?
Tuna
Tomatoes (squares)
Onions (squares)
Cilantro (only a bit)
Lemon
Salt
Mix them together and put it on top of a rice cake (Quaker Oats, which are super LOW fat) and add avocado slices on top. OMG. I'm hungry! LOL
XOXO

Boil a box of pasta
At same time saute some onion and minced garlic in a healthy dose of evoo. add some fresh lemon zest and juice, and sun dried tomatoes if you have them (fresh if you don't), salt and pepper to taste.
Drain pasta and add it to the "sauce" in the pot. Stir it together and let it sit for about five minutes to absorb the flavors. Stir every oncei n a while to prevent sticking to the pot.
Once done, bowl it up with some chucked tuna or salmon on the top with some parmesan cheese (or whatever cheese you have).
It is super easy, super good and healthy if you use the right ingredients. ANd kids love it.0 -
Thanks for all the ideas but they mostly sound like Pasta Casseroles...anything not so high calorie?0

Tuna wraps are awesome! I buy the flat out wraps or you can just buy regular tortilla wraps (aim for the whole wheat low calorie ones). I put tuna, cucumbers, sliced red onion and swiss cheese, roll it up and cut into half!
Also can do tuna cakes like crab cakes...same ingredients but you can use less breadcrumbs for a healthier version. Fry it up in a pan using Pam spray or a little olive oil.
You can also do tuna melts or "tuna boats" as my kids call them...buy french bread and cut in half and hollow out a little, put tuna mixture in and a little shredded cheese on top, broil for about 5 minutes until cheese is bubbly.0 -
I make a salad. My recipe is here: http://recipes.sparkpeople.com/recipe-detail.asp?recipe=1032847. Very simple.0
