Chia Seed Chocolate 'pudding'

This is one of my fave things when I'm craving chocolate, or something desserty - in fact I am making some right now! I love chia seeds and add them to my oatmeal, yogurt, smoothies...on my peanut (or almond) butter toast... but i've also made chia seed 'puddings' that are kind of tapioca-ish once the seeds expand.

Here's how I make mine:

1/2 cup unsweetened almond milk (sometimes I use unsweetened vanilla or almond/coconut!)

2 tbsp chia seeds

unsweetened cocoa powder (to taste - i use maybe half a tablespoon)

some kind of sweetener (i use a packet of Stevia - though not the whole thing).

Mix all together and let sit until the seeds absorb the milk and become puddingy!

You get a chocolate fix that is full of protein and fibre and omega 3s! the furthest thing from unhealthy! :)

Thanks for sharing this recipe just one question do you know the calories by any chance? Sounds like I'll be going to the store to get these items. Do you have any good recipes to make a lighter version of alfredo sauce but is as good as the real thing?

I used the recipe analyzer here on this site with the ingredients I have in my kitchen and came up with (assuming the original poster made a single serving):

    Ingredients
Nutiva - Organic Chia Seed, 2 Tbsp (12g)
Almond Dream - Unsweet Almond Milk, 0.5 cup
    Hersey's - Cocoa Powder Unsweetened, 1 tbsp
In the Raw - Stevia Packets, 1 packet

How long do you have to let it sit for it to become pudding consistency?
