No-Noodle Lasagna

Hello all!
I am carb-resistant but still love the occasional Italian dish, so I came up with this.

It is spaghetti squash lasagna... no noodles and you can substitute the squash with zucchini.

Line the bottom of a baking dish with the squash or zucchini.
Cover with pasta sauce (any kind - even chunky ragu-style works)

In a bowl, mix 2 eggs, 2 cups of cottage cheese, 2 cups of mozzarella and Italian seasoning.

Cover the pasta sauce with the above mixture.
And then use any extra pizza sauce on top.

I try to eat more vegetarian, so I top it with vegetarian meat crumbles from Morning Star Farms.

Cover the dish with foil and bake in the oven for about 25 minutes or until golden.

Feel free to mix it up as well... throw more veggies in like mushrooms, peppers, etc.

    Mmm Thank you so much for the idea!

    I'm cutting back on the carbs and I miss my pasta/lasagna so much...I will definitely have to try this. =)

    It has the same taste to be honest, just no noodles.. I like it a lot better.

    And it is a different spin on a contemporary dish that I choose to share with others who may like it.

    I sometimes make a moussaka/lasagne hybrid (for those who like to get technical with semantics :tongue:) and use courgette or aubergine instead of pasta.

    I have never seen spaghetti squash in the UK.
