Baked Oatmeal Recipe Wanted!

Here is one that I use, it is approximately 225 calories/serving for 9 servings. A few changes that I made - I used butter not butter sub and I did not include the cinnamon, vanilla or baking soda in the calorie count.
Baked Apple Oatmeal
2 eggs, lightly beaten
1/4 cup pure maple syrup or honey
1 teaspoon cinnamon
1 teaspoon vanilla
1 teaspoon baking powder
1/4 cup melted Smart Balance Original Buttery Spread (butter, coconut oil, and canola oil work well, too)
1/2 cup unsweetened applesauce (keep a pack of the individual serving cups on hand–they are the perfect size)
1 small apple, grated (fine to leave skin on)
1 1/4 cups milk (I use non-fat, any kind would work)
3 cups old-fashioned oats (use certified gluten-free oats if necessary)
1/3 cup brown sugar
Combine all ingredients except the oats and brown sugar in a large bowl. Add oats and mix well.
Transfer mixture to a buttered baking dish. (You may use a 9-inch pie plate or an 9-inch square pan–or really any 2-quart baking dish–depending on how thick you would like your oatmeal. A 10-inch cast iron skillet works well, too.) Cover and refrigerate overnight or for at least 4 hours.
When ready to bake, let the baking dish sit on the counter while the oven pre-heats to 375 degrees. Uncover the oatmeal and bake for 27-30 minutes or until just firm in the center. Remove oatmeal from oven, set oven to broil, and sprinkle brown sugar over top of oatmeal. Broil for a minute, watching very closely, or until the topping is melted and lightly browned.
May serve with warmed milk, slivered almonds, chopped walnuts or pecans, and sliced bananas, if desired.0 -

Ingredients
2 cups of old fashioned rolled oats
4 scoops of vanilla whey protein powder

ground flaxseed (optional)
1 tsp baking powder
1/4 tsp salt

1/2 cup Stevia in the Raw
4 egg whites
1 1/2
cups unsweetened almond milk
1/4 cup plain Greek yogurt
4 oz unsweetened applesauce

bananas (sliced fairly thin)
4 large
strawberries (sliced fairly thin)
Directions
1.
Preheat oven to 375 degrees F.

Berry Baked Oatmeal
1/2 C applesauce
¼ C brown sugar Splenda{or 1/3 C honey}

3 C oats (quick-cooking)
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 C milk
1 tsp. vanilla
1 C frozen berries (or fresh)
Combine the dry ingredients together in a bowl and stir well.
Add in the milk, vanilla, egg and applesauce.
Pour into a lightly greased 8x8 inch glass baking dish.
Bake at 350 for 40ish minutes, until centre is set.0 -

These are really good and there are a lot of variations, so you can easily find one that you like or mix it up so you won't get bored.0 -

It's extremely versatile - sometimes I add ground flax for extra nutrition, or 1/3-1/2c cocoa powder if I want a chocolatey oatmeal. I have also found that if I blend the wet ingredients in a blender with 3 scoops of protein powder, I can get an even more filling oatmeal. It gives it kind of a custardy texture, but you have to add an addition 1/3-1/2 c milk as well.0 -
