I just made this granola and it was really good:

I'm sure you could use wheat germ in place of one of the nut/seed ingredients. Just be sure to watch it during the last 10 minutes of baking-- mine went from golden to dark really quickly.0 -

I make her granola bar recipe and love it. (no chocolate though)
I make half in bars and half baked loosely
I have added raisins, and or dried apricots and sometimes sunflower seeds or what ever I am in the mood for.0 -
3 cups oatmeal
1 cup almonds
1/2 cup maple syrup
6 Tbsp olive oil
1 tsp pure vanilla extract
1/2 tsp cinnamon
1/2 tsp salt
Bake @350 until your house smells like heaven, about 20-25 minutes.
I'm sure you could put a half cup or cup of wheat germ in there and it would taste great.0 -

I do this one...
• Nonstick vegetable oil spray
•4 cups old-fashioned oats
•1 cup sliced almonds
•1/2 cup (packed) golden brown sugar
•1/4 teaspoon salt
•1/8 teaspoon ground cinnamon
•1/3 cup vegetable oil
•1/4 cup honey
•2 tablespoons sugar
•4 teaspoons vanilla extract
Position rack in middle of oven and preheat to 300°F. Lightly spray large baking sheet with nonstick spray. Mix oats, almonds, brown sugar, salt, and cinnamon in one bowl. Combine oil, honey, and sugar in small saucepan; bring to simmer over medium heat. Remove from heat; stir in vanilla. Pour hot liquid over oat mixture; stir well. Toss mixture until thoroughly mixed.
Spread granola on prepared baking sheet. Bake until golden brown, stirring occasionally, about 30-40 minutes. Transfer sheet to rack; cool granola completely. (Can be made 2 weeks ahead. Store in airtight container at room temperature.)0 -

I wouldn't substitute quick oats for rolled in baking recipes, they are different and will not bring you the same results.0

Here's mine, adapted from Alton Brown:
3 c. old-fashioned oats
1 c. chopped cashews (you could use other nuts, like pecans)
1 c. blanched, slivered almonds
3/4 c. sweetened shredded coconut (terrific in this recipe)
3 Tbsp. dark brown sugar
1/4 c. canola (or other) oil
3 Tbsp. maple syrup
3/4 tsp. salt
1 c. dried fruit (cherries, cranberries, raisins, blueberries, etc.)
Set oven racks to upper middle and lower middle positions. Heat oven to 250 degrees. In large bowl, combine first five ingredients (oats through brown sugar). In small bowl or measuring cup, combine oil, maple syrup, and salt, stirring well. Pour oil mixture over oat/nut mixture and stir thoroughly until well combined. Spread onto two rimmed baking sheets. Bake in oven for 1 hour and 15 minutes, stirring contents of pans every 15 minutes. (Every time I take the pans out to stir the granola, I also switch their position in the oven, so the lower pan becomes the upper pan and vice versa.) Remove from oven and let cool. Add dried fruit and stir to combine.
Makes about 800g of granola. I use it sparingly (about 1/3 cup) in my Greek yogurt. Here's the nutrition:
Total (810g) / Per serving (35g - about 1/3 c.)
Calories: 3,998 / 173
Carbs: 472g / 20
Fat: 212g / 9
Protein: 90g / 4
Fiber 83g / 4
ETA: I'm sure you could work some wheat germ in here somewhere.0
