I like to roast veggies, with olive oil and pepper. I prefer to include Brussels sprouts and sweet potatoes whenever I have them. I have been very lazy lately though.

Aromatic spices like the kind used in Moroccan/Indian/African cooking. Cumin, 5-spice, coriander, cinnamon, cardamom, lime, lemon, onions, chiopotle powder, garlic, butter buds sometimes, white wine, balsamic vinegar, basil, fresh cilantro. I am sure there's iother stuff-we use a lot of spices/herbs/stuff in our cooking.

I stirfry minced onions, shredded spinach, and grated/matchstick zucchini in a bit of sesame seed oil, sometimes with a bit of chili chutney to give it some heat.

Then again, in my opinion pretty much everything is improved by the addition of sesame seed oil.

I also roast my veggies a lot. With garlic, olive oil and pepper. I also been using white wine vingar lately and love it. Really takes good on most veggies. Lemon pepper is really good too. Mrs. Dash has some pretty good seasoning that are really good on veggies.

Steamed or sauteed with Cinnamon, Cayenne Pepper, garlic, sea salt and cumin. :) Cinnamon adds a very interesting and delicious flavor to pretty much everything. :)

As the weather warms up, grill baby, grill! I love my veggies grilled or roasted. Toss with a little olive oil and balsamic vinegar, spices/seasonigs of your choice & roast or grill 'em - so good.

Chop them (carrots, zucchini, squash, sweet onions, broccoli and cauliflower) to the size of dice.... toss with evoo and mccormick's veggie seasoning and roast for 20.
