Chocolate Vitamuffin Recipe! Yummy!

Hi All,

I can't remember where I saw 'Vitamuffin' mentioned, but apparently they are a kind of healthy-ish muffin available in the US? Anyway, as I have a mega sweet tooth, I am always looking for recipes for healthy-ish sweet snacks so I googled this and tried it on Friday and OMG!!!! Absolutely gorgeous!! The only problem now is these are so addictive so I have taken to freezing some so that I don't eat them all haha! Anyway, for those interested, here are the ingredients and nutritional info:

Tate and Lyle - Granulated Sugar, 225 g 900 225 0 0 0 0

Average - Vanilla Extract, 1.5 tsp (4g) 18 2 0 0 0 0

Homemade - Unsweetened Apple Sauce, 0.5 Cup (121g) 75 20 0 0 0 3


Total: 2581 428 64 60 240 25
Per Serving: 108 18 3 3 10

The recipe made 24. From recollection I mixed all the dry ingredients then stirred in the wet then at the end added the choc chips then baked on GM4 for around 15 mins. 108 cals each :D

I had some last night cut in half and spread with peanut butter. Delish!!

    In case anyone struggles to find unsweetened apple sauce (as I did!) then I made my own:

    4 apples peeled, cored and sliced, put into pan with a cup of water, sprinkle of cinnamon, simmer gently until apples are tender, then blitz in food processor! Yeilds a cup or so!
