Oooh a nice one. I tend to use reduced fat cheese and mustard powder in my sauce, use half water/half milk in your sauce and a good blob of yoghurt on top to make it extra creamy0

I always use Annie's brand, which I think tastes better. The recipe on the box is for using only milk, no butter. When I make it, I do 1/2 Tbl butter, 1/4 cup low% milk. Sometimes I bake it with a little panko and a handful of grated cheese on top. It satisfies my craving for restaurant mac n cheese without being THAT bad.
And I have put raw broccoli in before baking-- that increased the number of servings without adding many calories and was yummy!0 -

Macaroni Cheese is about the only food I've had to completely cut out, simply because it's got way too many calories to work in a portion size I'd find acceptable. I do love it though - especially with cauliflower and sweetcorn mixed in.0

I don't have an exact recipe but if you have one that you want to tweak I've had it with butternut squash and it was delicious (I honestly like it better).

I read a recipe somewhere using cottage cheese, you might try that. Also add some tomato and get your veg in there!0

Its pretty calorific!
Add some chicken breast and broccoli so its not all pasta and cheese sauce....and don't eat too much and, DEFINITLY don't have garlic bread and chips alongside it!0 -
Mac and Cheese is one of my favorite foods! Tons of calories though, I only allow myself a Mac and Cheese trick occasionally. I tried several "healthy" recipes and they just didn't satisfy the craving. I just let myself have the full fat cheesy goodness once in a while and focus on good eating the rest of the time.0

You can use a higher fiber pasta, add some broccoli and even some small pieces of chicken and not too crazy on the cheese...sorry no specific recipe though0

Bumping for ideas
I might try something with cauliflower, broccoli and some chicken in it. I imagine cottage cheese and laughing cow could be added to low fat cheese to add to the creaminess. I might play with a recipe in the calculator and see what the numbers would be like. I won't make something where the servings have to be tiny to make it fit into my day. It is like the brownie recipes floating around where an 8x8 pan makes 16 tiny servings. That is not gonna happen :huh: I would cut that sucker into 6 pieces and call it a day :laugh:0 -
There are some recipes on Pinterest that make it using cauliflower instead of pasta! I haven't had a chance to try it yet but I plan too. They look yummy!!!0

I've made this recipe from skinnytaste.com a few times and it's very good. I've been adding more broccoli than stated which further reduces the calories. I also use Fiber Gourmet pasta and that bumps up the fiber and reduces the calories as well.
