Canned Chicken Recipe suggestions

Hey there fellow MFP friends!

I have recently bought canned chicken which i have never tried before but I'm willing to give it a whirl if i can get some delicious and healthy recipe suggestions. I found one that seems to be up my alley and i wanted to share it with y'all but if you can suggest any other ones i'd really appreciate it.

Here is the one i found that seems delish :bigsmile:

Holiday Chicken Salad

3 cans (13 oz. ea.) drained Member's Mark Chicken Breast
1 1/2 c. dried cranberries
1 c. fat free mayonnaise or yogurt
1 c. chopped celery
1 c. chopped pecans or walnuts
1/2 c. minced green bell pepper
2 sliced green onions
1 tsp. paprika
Ground black pepper

In a medium bowl, shred drained chicken
Add the mayonnaise, paprika, cranberries, celery, bell pepper, onion and nuts. Mix together and add black pepper to taste.
Serve as a sandwich or with crackers.

    Chicken and Dumplings

    Ingredients:
    2 1/4 cups biscuit baking mix
    2/3 cup milk
    2 (14 ounce) cans chicken broth
    2 (10 ounce) cans chunk chicken, drained

    Directions:
    In a medium bowl, stir together the biscuit mix and milk just until it pulls together. Set aside.
    Pour the cans of chicken broth into a saucepan along with the chicken; bring to a boil. Once the broth is at a steady boil, take a handful of biscuit dough and flatten it in your hand. Tear off 1 to 2 inch pieces and drop them into the boiling broth. Make sure they are fully immersed at least for a moment. Once all of the dough is in the pot, carefully stir so that the newest dough clumps get covered by the broth. Cover, and simmer over medium heat for about 10 minutes, stirring occasionally.

    6 servings. Calories: 361 | Total Fat: 15.1g | Cholesterol: 63mg

    Six Can Chicken Tortilla Soup

    Ingredients:
    1 (15 ounce) can whole kernel corn, drained
    2 (14.5 ounce) cans chicken broth
    1 (10 ounce) can chunk chicken
    1 (15 ounce) can black beans
    1 (10 ounce) can diced tomatoes with green chile peppers, drained

    Directions:
    Open the cans of corn, chicken broth, chunk chicken, black beans, and diced tomatoes with green chilies. Pour everything into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through.

    6 servings. Calories: 151, Total Fat: 4.7g, Cholesterol: 32mg

    Canned chicken
    2 Fat free or any tortilla you like
    spinach fresh
    a little cheddar if you like I use ff feta and any other vegetable
    and grill like a grill cheese

    I do this a lot and set out peppers and black olives, onion, etc and everyone makes their own. Also a panini grill works great to make them just spray tortillas with pam and grill med heat until hot inside.

    Chicken Salad

    canned chicken
    onion
    grapes halved
    sweet pickle relish
    dill pickle relish
    mustard
    a few chopped pecans or walnuts
    cranberries
    apple
    and mayo if you must I don't use it at all and use the mustard and pickle juice to make it not so dry

    Serve on low calorie bread over lettuce as a salad, in a roll up on half an avocado

    tons of things you can do with the canned chicken. I love it and use it often I'm a flight attendant so I carry the pop open cans to make a quick salad or sandwich on the plane
