My absolute favorite! I make this weekly and heat up a portion each morning, I change it up each time, sometimes I use craisins instead of fresh fruit, almonds vs walnuts etc.

. I found a Martha Stewart oatmeal pancake recipe. I sub'd the milk for coconut milk. And of course I cut the recipe in 1/4.

This is my favorite: http://www.epicurious.com/recipes/food/views/Baked-Oatmeal-365069
Except that I add an extra egg and a lot more spices. It's kind of bland as written. Sometimes I will add flaxseed for extra nutrition, or 1/3-1/2c of cocoa powder if I want a chocolately treat, or peanut butter. It's very versatile and lends itself to a ton of different varieties. I eat some of this almost every day for breakfast, but make it with different fruit and spice combinations each time so I don't get sick of it. You can also add protein powder to it for an extra boost.0 -
