Do you love eggs, but avoid them out of fear of high cholesterol? Then you'll share my "Eggcitement" over the latest egg research. We all know that eggs are full of cholesterol. In fact, there are more than 200 mg of cholesterol in an egg; most of which is concentrated in the yolk. Our egg phobia is based on the belief that eating cholesterol will elevate our blood cholesterol levels. But it turns out that this is simply wrong.

* For years, we've been told that people on low-cholesterol diets should avoid eggs. This is because the high cholesterol level in egg yolks was thought to elevate blood cholesterol. However, it is well know that dietary cholesterol intake has a very insignificant effect on your blood cholesterol levels. There are other factors, such as the rest of your diet (including fiber, antioxidants, and good fat intake).

* Cholesterol isn't the villian it's been made out to be, etiher. Our bodies require lots of cholesterol, which is an important component of cell membranes and hormones, including estrogen and testosterone. The liver produces about 1,000 mg of cholesterol each day, while the typical diet contributes only a few hundred milligrams. Thus, dietary cholesterol plays only a small part in our overall choelsterol levels.

* A random crossover-design study was conducted on 33 men and women over the age of 60. They were asked to eat one egg every day for five weeks. When the ressearchers looked at the blood concentrations of total cholesterol, there was no difference between egg consumption and no egg consumption. In addition, the researchers found similar results in the subjects' bad cholesterol (LDL), good cholesterol (HDL), and trigyceride levels.

* We all need cholestero, and as a pregnant woman, your needs for cholesterol are even higher. Every cell in your body contains cholesterol - it's part of the basic structure of every cell membrane. To make a baby, your body will produce millions of new cells, and cholesterol is needed for every one.

* Don't forget that egg yolks are one of the best sources of choline, an important nutrient for the brain!

* Eggs are an excellent source of protein, containing all the essential amino acids. During your third trimester, your muscles need all of the support they can get from your diet. Protein in your diet will help your muscles keep up with the extra weight they are asked to carry around all day from your growing belly.

* Eggs are also a great source of other nutrients, including the antioxidant lutein. There's about 1 mg of lutein in a regular egg, with some specialty eggs containing up to 6 mg. Lutein is a nutrient involved in eye health. Your baby's eyes are still developing, and they'll appreciate all the nutritional help you can offer by eating healthy foods like eggs.

A chicken's breed determines the color of its eggshells. Some breeds lay white eggs, while others lay various shades of brown and some even lay blue, olive green, or pink eggs. When you're buying eggs, shell color is a matter of aesthetics: they're all equally nutritious. And the yolks of all eggs are yellow to apricot, no matter what color the shell is.

I can't say enough good things about eggs. They're nature's most perfect food. But how you cook them materrs. That's because the less the yolk getts oxidized and the better the egg is for you. Poaching and boiling are both better ways to go.

I'd rather see you eat scrambled eggs than not eat eggs at all. But instead why not go for an omelet, frittata, or huevos rancheros and up the veggie content? And skip the fried eggs, please. No reason to turn a good food bad!

    What's your favorite way to eat eggs?

    I like to hard boil two eggs and slice them over a piece of toast and add a little salt and pepper. Keeps me satisfied longer in the mornings as well. :-)

    I don't really have a favorite way, I love eggs!!! I had an egg sandwich for dinner yesterday and a western egg white in a whole wheat english muffin for breakfast. I could probably eat eggs everyday :happy:
