Salsa is so good with rice0

I make my own salsa
tin of tomatoes
100g radishes
100g onion
some jalapeno peppers
salt & pepper on taste
herbs if I have them as basil or parsley
in fact right now I am having some wholegrain rice, tuna and salsa mixed - came at 243 calories total0 -
Under my sweet and sour stir fry. It's SUPER easy to make!!
1/2 cup brown sugar
1/2 cup vinegar
1/2 cup light soy sauce (I usually fill the 1/2 cup just over half way and top it off with water)
3-4 garlic cloves
chicken or beef, sliced
carrots, broccoli, whatever other veggies you'd like
Mix the liquids together in wok, and then add the rest, bring to a boil and then reduce heat, simmer until veggies are cooked, thicken with either flour and water or cornstarch and water
Serve over rice. Yum!0 -
98% FF cream of chicken soup and some salsa0

Brown rice is a staple with me, I put chunky salsa in it, I'll mix broccoli or peas with it and cook in low-salt chicken bouillon, I also cook it in bouillon instead of plain water, might add black beans and diced tomatoes. Sometimes I do the above and mix diced chicken breast for a complete meal or cook it with double the liquid to make a brown rice soup with vegs.0

I'll be watching this thread bc I don't care to much for brown rice even though i know it's better for me. The steamable brand of brown rice is not to bad but the ones I have to "cook" myself...ooh....0

You can buy already seasoned canned black beans ( Cuban style, Jalapeño Lime, etc). For a quick dinner toss the rice, black beans, chicken or turkey sausage together. Add toppings if you wish like cheese, plain Greek yogurt, or sour cream.0

I cook my brown rice with chicken broth if I'm doing a savory dish. You can get low sodium and low fat/fat free. I use the low fat kind.
Then I make my spicy black beans and serve those over top with a crumbling of low fat feta.

also, you can cook it in a slow cooker. SO MUCH EASIER0

I do a couple different things:
1) Dice up an onion very fine, and throw in a packet of Lipton's Onion Soup Mix.
2) Juice of 1 lime, course sea salt, and when it's done, add cilantro and fluff! (If you've ever had Chipotle's rice it tastes VERY similar) If you use Basmati rice instead of brown rice it's identical.0 -
hot saaaaaaaaaauce.
and it's 0 calories.0 -
Just a tsp of Tumeric!! and a couple cardamon pods...Does wonders!
I do this with cauliflower rice too, is amazing!0 -
i made some rice and peas the other day with brown rice that tasted pretty good
like 75g rice
a bit of chopped onion
garlic clove
1 small chili
1/3 can coconut milk
1/3 can black beans
1 cup stock
(or basically look up Nigella's rice and peas) not the lest calorific but really good.0 -
Use the rice as a "bed" under things such as a roasted & seasoned chicken thigh. Top it with chili or some other spicy dish. Use it in tacos and green salads. Rice is as versatile as you make it.0

Great ideas, thanks for all the replies!0

I use broth and add onion or garlic powder and sometimes add soyaki or soy sauce just a little bit for flavor especially if im having it with salmon..Yum ! i add stir fry veggies and have a salmon bowl0
-
I cook my brown rice with a chicken bullion cube or 2 to give it a chicken flavor. When I make a veggie stir fry, I put a tablespoon or 2 in of Teryaki sauce to flavor it.0

I make brown rice better by eating any rice other than brown rice. I think it's gross. There's so many other kinds out there.
***HOWEVER - cooking your rice in broth or even just adding spices to the water while boiling will make it much better better.***
my favo is to make curry rice. Add curry powder, turmeric, salt, pepper, cardomom, cumin and a tiny bit O butter or olive oil.
It's delicious and I do it with all the rices I buy. Jasmine, basmati, black, wild...
good luck!0 -
Herbs, spices, vegetables, hot sauce0

I usuallly eat mine plain (cooked in plain water), but I want to give some of these ideas a try.0

I usually add black beans and chopped tomatoes. Or I make a stir fry. I also make one of my favorites skinnytastes.com shrimp pineapple "fried" rice.0

Before cooking, I satee onions, peppers, mushrooms, garlic...then add the water and the rice when boiling and let cook. When cooked, add a can or two of tomatoes. Eat it like that or hollow out bell peppers, stuff with rice then put in a vegetable steamer and steam till peppers are soft; you have meatless stuffed peppers.
I like to eat the rice, either plain or fancy, kind of mixed in with my salad of greens, onions, and ranch. Yummy.....or cottage chees in place of ranch.0 -
do dif themes....italian/mexican/chinese....differant sauces...marinara, salsa....cook with broth....a vidalia onion & mushroom go a long way for added some bulk and making the meal bigger....and can coincide w/any of the differant variations you may do....0

When I want a great Mexican Rice, I use white or brown "Minute Rice" and cook according to direction. Then when you fluff it up after it's done cooking, add a jar of 'Herdez" salsa. This is the easiest, best Mexican rice there is!!! I hope you'll try it and hope you like it if you do. Of course, you could use your favorite salsa as well.0
-
I like to add olive oil, garlic powder, and onion powder or chopped onions. Sometimes, I will put crushed red pepper in with it or cut up sweet peppers to put in it.0
-
I eat it plain. Prepared correctly, brown rice has a natural nutty sweetness. As my goal usually is to reduce calories, not increase them, I'm happy if there's a healthy food I can eat as is. My philosophy is, Why would I want to bother exploring interesting toppings that are going to increase calories, especially right now?0
