I'm going to try and add more beans into my diet - what are your favorite bean recipes?

I'm thinking I need to make a bean dip for work next week, to eat with my veggies for lunch.

    This one is delicious:
    Chickpea Kale Salad recipe

    1 can chickpeas, rinsed and drained
    3-4 leaves kale, chopped
    2 tablespoons fresh parsley, chopped
    2 tablespoons olive oil
    1 clove garlic, chopped
    1 lemon, juiced
    salt and pepper, to taste
    pecorino romano or parmesan cheese, grated to taste

    ^of course you don't have to use as much cheese as I did. ;-)


    In a bowl, combine chickpeas, kale, parsley, olive oil, garlic and lemon juice. Add salt, pepper and grated cheese to taste. Toss all ingredients together and mix well. Cover bowl and refrigerate. Best served at room temperature or chilled. Top with more grated cheese for presentation.

    (I always chop the kale then while running it under cold water crunch and smash it up with my fingers, i think it give it a better consistency that way)

    This one is my favorite:
    Blackeye Peas Salad with Lime-Garlic-Cilantro Dressing

    For the dressing you will need: 2 garlic cloves, 1/8 tsp cumin, 1 lime juiced,1/8 tsp lime zest, 1 tsp salt, 1/4 cup olive oil, pinch of sugar, 1/4 cup chopped cilantro.

    For the salad: 2 (12oz) bags of frozen black eye peas (cooked according to directions on the package), 1 large tomato, 1/2 small red onion, 1 serrano or jalapeno chili, 2 avocados.

    smash your garlic cloves with the side of the knife, mash and shmear with the side of the knife sprinkling with salt until it becomes a thick paste. add lime zest, cumin and a pinch of sugar. when mixed squeeze in the juice of one lime. add 1/4c olive oil. mix well. add the rest of the oil and mix very well. add the cilantro and set aside. This is your dressing.

    Chop the red onion into small pieces (I use whatever kind of onions I have and like to saute them.) cut the edges off the hot pepper, seed it and finely chop. Cut the avocados in half, seed and dice. same with the tomato, cut, seed and dice. throw all the vegetables into a bowl, add cooked black eye peas (I sometimes you black beans.) add the reserved dressing and toss.

    My recipe for hummus:

    Can or two of garbanzo beans: drained (depending on how much you want to make.)
    whole bulb of roasted garlic
    olive oil
    salt & pepper
    chili oil
    chili powder

    Just throw the roasted garlic and garbanzo beans in a food processor, or I've even just used a hand blender. Add a little bit of olive oil at a time until you get a hummus consistency. Add everything else in bits until you like the flavor and you're done.

    I like it with celery or carrots. Sometimes I use it as a sandwich spread, or wrap some in a crispy lettuce leaf.

    ok. I'm done now. Hopefully I haven't embarrassed myself with my love of beans. >.>

    Got this from the slimfast site a couple of years ago. Whole family loves it, we just had it tonight as a matter of fact :)

    Black Bean Wraps
    serves 4

    15 oz. black beans
    1/4 C light mayo
    1/2 teasponn Lawry's garlic powder with parsley (we add more than this)
    4 whole wheat tortillas
    1 1/2 C reduced fat chedder (we substitute regular and just use less)
    2 Cups chopped lettuce
    1 C chopped tomato
    1 avacado

    1) Rinse and drain beans. Slice the avacado
    2) In medium microwave safe bowl, mash the beans with a fork (potato ricer works well here), stir in mayo and garlic powder; microwave on high stirring once, 1 minute or until heated through
    3) Spread the bean mixture on the tortillas, and layer on remaining ingredients. Roll or fold!
    These are good cold, packed for lunch as well.

    1/2 can black beans- drained and rinsed
    4 ish roma tomatos
    1 avacado
    cilantro- a small handful
    1/2 lime juiced
    garlic salt and cumin to taste

    you can adjust any of those and also add a serving of brown rice, or shredded/canned chicken. This is my favorite recipe of all time, works great as salad topping or in a wrap or just straight

    Sundried tomato hummus

    2 cups chickpeas cooked with no salt
    About 5-6 sun dried tomatoes
    1/2 cup tahiani
    2 tablespoon extra virgin olive oil
    lemon juice to taste
    1 clove garlic
    cumin
    Red pepper
    And water as needed

    Mix in food processor or blender until creamy adding water as needed serve with pita bread, veggies or i like to mix it with rice :)

    Black bean soup!! saute mushrooms, garlic and onions untill clear... follow with adding chicken broth, tomatoes, chilli powder and black beans. top with green onions. fun, fibrous, and filling.

    Lentil soup

    1 bag of dry lentils
    2 med carrots chopped
    1 onion chopped
    1 tomatoe chopped
    basil
    garlic
    and i add italian seasoning
    8 cups water

    Put everything into a very large pot and bring to a boil reduce heat and simmer for 1 hour. You can add spinach right at the 55 min mark for some extra nutrition :)
