    I've been Vegan for 20 years. I know it's not for everyone, but I don't find it to be challenging at all.

    Not low fat but it does taste divine.
    BLACK BETTY.
    8oz plain flour,
    3 tablespoons cocoa,
    1 Tspoon bicarb of soda,
    8oz sugar,
    half Tspoon salt,
    5 tablespoons cooking oil,
    1 tablespoon vinegar,
    1 Tspoon vanilla essence,
    half pint cold water,

    > Beat everything together.(electric whisk?)
    Pour into greased & lined tin (round 8inch, or 9x9inch square)
    Bake at gas mark 4, (350F) for about 1 hour.
    Enjoy! ( I usually fill with butter
    > cream, margarine cream to be more precise.) Better after 2 or 3 days
    > if you can keep it that long.

    also there is a cookbook i got at the library that was betty crocker vegetarian but they did have vegan recipes in it too.
    go on your local library catolog online and type vegan cookbook, should be some good ones out there!

    chickpea salad:
    a serving of chickpeas
    half an avocado
    spices (garlic powder, onion powder, etc)
    lettuce
    red onion
    bread

    mash the chickpeas and avocado together, season with spices. top with lettice and onion and eat on bread. nom nom!

    chickpea soup:
    not sure exactly of the measurements, you can prolly google it
    veg broth
    frozen spinach, thawed and drained
    chickpeas
    carrots
    onion
    celery
    bring broth to boil, add chickpeas carrots spinach onion celery, and any other veggies. if you want a thicker soup, move to a blender and puree. return to sauce pan bring back to boil, add a little lemon juice at the end. delsih.

    quinoa with spaghetti sauce and veggies

    sushi bowl - rice, nori sheets crumbled, edamame, carrots, cucumber, avocado, asparagus with soy sauce

    breakfast - quick oats with applesauce and cinnamon
    life cereal with coconut milk
    tofu scramble with salsa, peppers, onion, mushrooms, spices on bread if you desire or in a tortilla for a breakfast burrito

    shirataki noodles with stir fry veggies, tofu and soy sauce

    boca vegan crumbles over shirataki noodles with mushrooms and other veggies, or over pasta made without dairy, eggs, etc.

    you can make seitan out of vital wheat gluten, and from there it can be used as a sub for chicken or steak in recipes. very good on bread with peppers and onions and soycheese, like a cheesesteak almost

    just check the labels of the breads to make sure there is no egg, honey, milk, butter in it. or you can make your own :]
