511 calories left, but only 25 carbs!

Crap, I have 511 calories left for the evening, but only 25 carbs! What could I eat?! I’m vegetarian, btw.

I plan on working out later, so that should up my carbs a bit, hopefully.

    How about a nice cheese omelet? Cook it in a couple of tablespoons of butter, and that should do it.

    If your carbs have come from fruits, veggies, and beans I wouldn't worry about going over too much. Its really the processed carbs that you should be careful with. I always look at the fiber to carb ratio. If it's high in fiber, I don't worry to much about it.

    But I agree with the omelet suggestion.
