I am on the look out for either a Healthy Recipe for my Favorite Vegetable Lasagne.
Anyone know a guilt free version or a shop bought ready meal that is yummy?

Replace the pasta with sliced eggplant or zucchini. There are healthier versions of the white sauce you can make using ricotta. Other than that veggie lasagne isn't really that bad0

There's a great recipe at Fat Free Vegan...I don't have the URL handy, but Google it and it will come right up.
One thing we do is use tofu instead of ricotta. If you mix silken tofu with some nutritional yeast, garlic, and herbs, it is remarkably cheesy with a lovely fluffy texture. We mix mushrooms into ours as well. Cholesterol free and packed with protein!0 -
I found one once that used cottage cheese and rye mountain bread instead of normal cheese and pasta.
I suppose you could just pack it full of what ever veggies you want sweet potato, zucchini, eggplant, spinach and capsicum. Then if you waned a tomato based sauce in between just get a can of crushed tomato. I always try to look for ones that are low in salt and sugar.0 -

Hairy Bikers use layers of leeks insted of pasta sheets. I tried it and made a tomato and veg filling with a quark cheese sauce.

I layer roasted eggplant slices, spinach mixed with laughing cow cheese wedges, and Classico spaghetti sauce, top with mozzarella and bake.
When they are around, I sometimes add other veggies, like mushrooms.0
