Help! I need low sodium buffalo chicken!!

Ok, I'm addicted to buffalo chicken and anyone who knows anything about these knows the buffalo sauce is astronomical on sodium levels. I love love love the medium buffalo sauce. Then, add the Ranch, or even Bleu Cheese dressings, is piling on more sodium.
Please don't say to eat just one. Who really does that?? lol Besides, when I log it, I'm within calorie, carbs, etc...it's just the sodium that goes off the charts. Because of this, I've made it my "cheat" meal for either Friday night or Saturday. But, due to the sodium, I end up retaining water ridiculously. I'm tired of having to work that off on top of the 1.5 lb goal for the week. Last week, I lost 2 lbs...plus, like 10 lbs of water weight.
Anyone have any recipes that I can do at home that taste like the buffalo chicken ya get out...just minus so much sodium?
Note: I use Morton's Salt Substitute...so, if salt has to be used, I can use this and it would cut it drastically.

I am also a buffalo-flavor addict. I make a buffalo chicken soup that satiates the desire [for a few days!] and is only about 231 per serving if made with low-fat/no-fat ingredients. http://allrecipes.com/Recipe/Buffalo-Chicken-Soup/Detail.aspx I had no idea how much sodium Franks Buffalo sauce has in it until I logged the recipe for my soup. 1449! Mind you, I double the amount of buffalo sauce in the recipe.

The only real source of sodium in it is the chili powder which does contain salt.
1/4 C water
2 T unsalted butter or olive oil
1/2 T chili powder
2 T ground red pepper
1/4 C cider vinegar
Simmer for 5 minutes. Add more vinegar to taste. The more vinegar you add, the thinner it gets and tastes more and more like bottled sauce. I prefer butter to olive oil b/c it seems to give it a sweeter, smoother taste.
Keeps well in the fridge for weeks.1 -
Thank you both!! I'll surely give these recipes a try and definitely the sauce. I guess I'm going on a quest to figure out a way to get chili powder without sodium. If it's possible. lol
It just amazes me that when I'm grocery shopping, buffalo sauce is about the only thing on the shelves that doesn't have some sort of improvement. Just about everything else is reduced sugar, low fat, etc. Wish they'd get with the program. haha0 -

Hungry Girl has a recipe for a spicy crispy chicken sandwhich that all together has 861mg of sodium, but that also includes all the ingredients such as bread etc. The recipe is in her Recipes and Survival Strategies for Guilt free eating in the real world.

Grace hot pepper sauce. I put that stuff on everything. lowest sodium hot sauce I've found.
