Celiac disease?

Anyone else Celiac? Want to talk about how much you miss gluten-FULL? ;)

  • I'm not celiac, but follow a gluten free diet (non-celiac gluten intolerant.) I think I miss eating out, 'like a normal person' more than I miss the actual food.

    I've been doing gluten free for almost 2 years. I miss the gluteny stuff less and less as time goes by. I rarely make bread (gluten free mix) any more. When I started HAD to have bread "substitute", Now, hardly even think about it. It's also an easy out when people at work bring in cake and donuts and other high empty calorie treats.

    Right now I do not miss gluten at all. Nor do I miss the stomach aches, my swollen feet or the headaches. :wink:

    It is so hard to eat out though, as I also cannot have citrus (lemon), tomatoes (sauces), pepper, raw onions, hot or spicy sauces or anything with nitrates (sausages)

    How many times can one say, "May I have some lettuce and spinach with grilled plain chicken, side of oil/vinegar please"? :laugh: :laugh:

    I do feel my medical issues coming under control though so it is so very worth it all. Thank goodness they ruled out Celiac after waiting 2 weeks for the results. Now I just don't want to go back to the gluten because I feel so much better without it.

    I have had celiac and been GF for seven years. I miss hamburger buns. That is about it.
